With the "i" springs you accomplish two things at once - you'll get rid of that 4x4 ground clearance/wheel gap and you'll even out the wheel gap from front to rear. It won't be perfect like it would be with a set of coilovers, but it will be a lot better than stock.
I looked at that plate when I swapped struts, it's more like 1/8" inch and I doubt removing it would make much difference as far as looks. However it did look like it was there for a good reason, distributing load & reinforcing around the unibody at that point so I left it in.
