Surely, there must be other differences than just heat dissipation. Do you think the brake bias changes across the kits? ...or am I misunderstanding how brake bias works?

I will shoot RB an email on the piston sizes they use for the 3 different kits.
You are right, the larger the rotor the more bias towards it, but manufacturers often use different piston sizes to compensate.
