I was an instructor at the last one we had in the New Orleans area.
We set up a few exercises: slalom, lane change, skid pad, and a braking area and rotated between them throughout the day. There was some classroom stuff as well (short video, I believe).
It rained all day for us, which made things "interestion".
It seemed like the students were much more confident by the end of the day and had a much better idea of their car's limits.
I had a blast (except for the motion sickness) and didn't drive a car all day. Seems like most of the kids had a great time as well.
Crazy thing I learned: Almost every student did not know how to brake properly in a panic situation . . . I thought "slam foot to the floor" was a simple concept.
I'd certainly do it. Definitely not a waste of time.
