you'll only really see a difference when transferring to your machine with a card reader. 5D shoots video fine with just UDMA and it can't shoot fast enough to beat the buffer anyway. the 1Dx on the other hand, it has a much larger bit rate.
with that said, the UDMA6 16GB sandisk is now only $66 (they were like $110+), which sucks because i just bought two more UDMA 16GB cards for $62, which are now $56. oh well.
