I just emailed the manufacturer of these and here is his response:

The car will still warm up like normal. Thermostat will start to open sooner and is fully open by 194-200f (roughly 30* lower than stock). Actual operating temp will vary with ambient temp, driving conditions, and oil cooler. I generally see customers that normally operate at 245-250 drop to the 210 range.
