^ it`s a question of flow and lubrication and engine clearances.
there is a lot more to oil selection than pressure and temp management,

you want the thinnest oil you can get away with while remaining in the manufacturer`s specs for min oil pressure at ~3k rpm at operating temp which I believe is in the neighborhood of 50psi, The race guys can confirm this.

you only bump up the oil viscosity if you have really ran out of cooling solutions.
as an example if you have 2 huge oil coolers, ducted, cleaned and exposed to air path and are still blowing through the 240-250 then you can try another oil grade.
