You mean 245/35/19 ? It will not rub, since the diameter is identical to the 245/40/18. If you are planning 245/35/18 of course there will be no rubbing.
As for the "planted" feeling, the suspension has to do with this more than the wheels but what I can say is that I am very surprised by the levels of grip of the Continental DWS. With the Nitto 555R in the back there is a high level of grip but there is still wheel spin if you floor it in 2nd gear.
