Yes 99.9% of the time, the coolant is drained and refilled with new coolant during the replacement of the water pump.

The thermostat is not usually replaced unless there is a fault (MAP Cooling) or you have overheated. If you did experience an overheating of the engine, then in most cases the t-stat is replaced for good measure.
