Depending on the grade of steel, anything can be threatened by the elements. But if both materials were sampled in water, the galvanized steel will corrode faster than the stainless steel.
On the other hand, these products are manufactured to a certain code or standard before it's released to the market. So I doubt they will sacrifice their brand/reputation for a few coilover sales.
