I dipped mine and it seems to be holding up so far. I taped a plastic painter's dropcloth inside the car to get the inside areas, and it worked pretty well. No overspray got into the car and so far no flaking or peeling with regular use of all the doors. I think a big part of it is giving the paint adequate time to dry, both between coats and before touching/rubbing the trim (i.e. using the doors). I did my kidney grills at the same time, and they were having trouble drying (probably from putting too thick a coat); one section got nudged a bit before it was completely dry, and that's the exact section that started peeling and had to be redone. So wait until everything is completely dry (30 minutes or so) before even thinking about touching it or trying to use your doors.
