I start braking a few seconds before the turn to slow my speed. What should I be doing with the clutch during that few seconds of braking? Then I go into the turn, switching gears, and come out of the turn in a lower gear and slam the gas. Is that correct?

It's a actually not hard if you practice. Clutch in, push the brake pedal with the balls of your feet (or toe if the pedals are far apart) and prod the gas pedal with your heel to bring the revs up when you let the clutch out.
Another way is to put the left half of your foot on the brake and the right on the gas.
