Fresh oil... It might be a good idea to go somewhat heavier than stock to deal with the inevitable high oil temperatures:

All-around and track
Any good 0W-40 or 5W-40 synthetic that meets minimum requirements (API SM)
Castrol 5W-50
Mobil 1 15W-50

Specifically for track use:
Castrol TWS 10W-60
Liqui-Moly 10W-60
Motul 10W-60

I for one would not track on the 5W-30 OE oil. It may be OK on the street but at 300º F oil temps I'd feel a lot better with a more viscous oil.

You don't need to use an oil that meets BMW LL-01 unless you want to run extended drain intervals (more than 7.5k mi).
