Really should fit the correct sizes, all it will mean is the rears will have a slight stretch as I'm guessing your alloys are staggered fitment and wider at the rear.
No real difference real world, doubt you'd notice the slight loss in grip really. The slight stretch might make them stiffer than a 255 would be so maybe a slight loss in ride comfort but it would be miniscule.
I cant even find any photos of a 225/45/17 on an 8.5, so it's not considered a stretch worth even photographing, so it will be slight, if at all.
