We remove the nerve tissue with an instrument. While doing that we also have sodium hypochlorite (which is a fancy way of saying bleach) in the canal to dissove the tissue and kill any bacteria/viruses/fungi that's causing the infection.
There are lasers that can be used for root canals but currently are not as effective has regular mechanical instrumentation with bleach.
