It's a terrible idea and I'd be shocked if insurance would pay for it. I'd bet the cost goes up at least 50% to go from black to white. Just because they are respraying the car because it was keyed doesn't mean they planned on disassembling it - which is pretty much what you have to do to do it right. Take a good look at your car now - every place that's black will have to be prepped and repainted -hinges, jams, sills, engine bay area, etc.

Even if you did get them to do it, if you are at all picky you'll never be happy.
