I'd recommend you guys look into Velos Designwerks. They've got dynos & additional info on their website (
http://velosdesignwerks.com/products-page/tuning/), but they've got tunes available for cars powered by the N54, N55, S65, S85, S63, S63 Tu Engines. Chances are they'll be able to better address your performance needs then the mainstream options here (JB4, PROcede, COBB). The nice thing is you can get a "Personal Handheld Tuner" which is basically their version of the COBB AP.
