5" does not require cutting but it does require the removal of the OEM connectors.

The new 7" IC version with the 2.75" is not in and only taking order now right? Do we need to buy anything else to connect to OEM piping?

Sorry, looks like I missed your original question.

The OEM connector utilizes the stock couplers/connectors which are a bit more restrictive than the 2.75" connectors we offer. The 2.75" connectors replace the OEM connectors.

In terms of cooling capacity, the 5" is good for up to 425-450whp, anything higher and it will start becoming less efficient. The 7" can handle anything in that range to about 650whp theoretically. If your HP goals are higher than 650whp, a taller core will be preferable. The use of meth in both cases will also increase the intercoolers efficiency as well.
