Any sort of budget in mind?
Top end - Hotel Tresanton in St Mawes is stunning but £300+ a night. Slightly more sensible is the recently rebuilt St Moritz Hotel in Trebtherick nr Rock. Great rooms, a pool, brilliant food, set on one the of nicest stretches of coast anywhere (I grew up there). No direct sea views but its very close. If not worried about sea views, the sister hotel of Tresanton (run by "Hotel Inspector" Alex Polizzi, grand daughter of Charles Forte) is the Hotel Endsleigh on the Devon/Cornwall border. Utterly stunning house in 108 acres of land and on the banks of the River Tamar - you WILL feel like Lord of the Manor if you stay there. Again pricey - £300+ per night if you stay in a suite (which you must do). Other ideas if none of the above suit but we've stayed and eaten at all of the above and they are brilliant. http://www.tresanton.com http://www.stmoritzhotel.co.uk http://www.hotelendsleigh.com

Just remembered - you have a dog. Endsleigh is VERY dog friendly, might need to check the others (think the Tresanton is okay but St Moritz isn't).

TBH it's a bit of a nice hotel "wilderness" from Rock upwards/eastwards on the North coast.
Port Isaac has some okayish ones but nothing special, Bude has naff all (and is hard to get to) and North Devon, while pretty, definitely lack classy hotels. On the South Coast, the Nare Hotel is further East - not stayed there but reports are good: http://www.narehotel.co.uk Moving further along it's all a bit average until you hit Fowey - this place is top notch: http://www.theoldquayhouse.com Then another "gap" in good hotels until you hit Salcombe in South Devon. This is a good one: http://www.southsands.com

Stayed in both a suite and a "King" room at the St Moritz - both excellent. They often do last minute deals, especially in January!

Not a hotel but we have just returned from a short break in south Devon, stayed in one their cottages. Beautiful place and very good for the kids etc.
