Z35i 2 piece rotors for the front / oem blanks on the rear would suit your needs for group 2/3 HPDE. Other popular options are Power Slot, Stoptech Cyro slot, and DBA 4000's.

Problem is unrelated to Cool Carbon pad or the RacingBrake rotor. This problem is inherent with slotted rotors. I have not had a set of slotted rotors that does not have that weird "vibration" when braking at high speed with a street pad.
While I can't offer a real expert's opinion as to why it does it, I can only speculate that the slots on a slotted rotor, when braking at high speed/threshold, starts to scrape away a thin layer of pad every time you apply the brakes, and that results in an inconsistent feel in sometimes results in vibration and sometimes it doesn't. All I know is, this does not happen with DTC-60s that I use on the track no matter how hard I am on it, but if I were to be lazy and leave my street pad in the car, sometimes the front end of the car would shake like there's something wrong with it.

Works great, this setup will get you by on the track but there is no substitute for proper track pads. I used HPS's on my gt3 RS setup and it worked great but those brakes are a bit overkill.
