I know people say that when you use your ipod/iphone with the y cable you are using the idevice dac, but wonder is this really true? The y cable connects with the 30 pin, is there an analog signal coming from that OR is there a DAC in that plastic block of the y cable where the USB and 3.5mm come from?

Headphone jack is not line level.

Thanks guys... so headphone jack puts our a slightly amplified signal for driving phones and 30 pin puts out an unamplified line level analog. Got it.
