Has anyone here put full size tires on their car instead of low profile?

I'm looking to go from my 18" low profiles to full size (full thickness) tires. Can I just go down one size to 17" rims or do I have to go smaller? Also, what kind of wheel spacers do I need to install in the rear? (My rears are 18x8.5 currently and I think I am probably going to get 17x8 all around)

You can put taller tires on your current wheels or jump down to a 17 and put stock sized, or taller, tires on there as well...depends on what your goals are.

See sig.

If I get 17x8 rims, what type of spacers and how many MM would they have to be if my rear tires are normally 18x8.5?

The size of the spacer depends on the current offset of your wheels and it's all a matter of taste on how wide you want the wheels to stick out. Figure out what offset you have now and go from there.

X2. In order to make any kind of educated guess we need offsets from both sets of wheels. Even then I suggest installing the setup first then measuring to make sure you get the size you want.

You should be able to run a 17" wheel and tire combo without much of an issue. As for the wheel spacers, that will depend entirely on the wheel specs. Some wheel sizes won't require a spacer at all, others might.
