According to her son her last words were "I miss her so much. I just want to see Carrie." then she died of a stroke about 15 minutes later.

Have you seen Rogue One yet?

Through the magic of CGI the young Carrie Fisher makes a brief cameo in Rogue One. If you had no inclination of the Star Wars movies or who any of these actors were you'd swear they were real.

Tarkin is also in Rogue one via CGI since the original actor who played him died a while ago.

They finished filming Episode VIII already so she'll be in it.

As for Episode IX, if you've seen Rogue One you can see they handled bringing back characters with dead actors in it just fine (Grand Moff Tarkin).

In fact, if you had no idea the original actor who played him was dead, you probably thought he was a real person...well he was, but cast to an actor who had a similar build and could mimic his voice then CGI simply replaced his face.
