So I know ECStuning made a great coilover install and adjustment video but Sonic Tuning Coilovers are a little different from ST Coils.

Sonic Tuning has 3 rings. Top ring I'm told controls spring rate. Middle ring is a locking ring that is locked up against the top ring.

Lastly the bottom ring is the locking ring against the bottom where there is no thread remaining.

So how do you properly adjust the height of these Coilovers? I'm told I'm suppose to lock the middle ring up against the top ring and use the wrenches to turn the top ring. But if I do the spring becomes mobile and doesn't that mess with the spring rate?

St coils are height adjustable only, so there is only one adjustment and that is to adjust the height of the springs.

For Sonic Tuning coils you loosen the very bottom ring and spin the entire upper shock body and spring down into the bottom mount. Retighten the bottom ring once you're at the desired height.

For the rear you adjust the spring seat, but also have to adjust the shock body length by the same amount to maintain proper strut travel and prevent bottoming out the strut.

Also I understand the adjusting the spring seat, but how does that measurement correspond to adjusting the strut.

From how you described them, you'd loosen the bottom ring, and turn the top ring, which will be locked in place by the middle ring, to put more of the upper body into the lower to make the entire assembly shorter (lowering), or loosen the bottom ring and turn the middle ring, locked in place by the top ring, to get more of the upper body out of the lower to make the entire assembly longer (raising.)

I tried that today' but I don't see the shocking turning down, only the spring. I turn the top ring but the middle ring moves down along with the tip ring and spring

It doesn't sound like you have the middle and top ring locked together well. You should have two wrenches so you can hold one and tighten the other to it; then you should be able to do as I described.
