Firstly, you need to consider standards:

EIA/TIA 568 series – North American based standards, components
are Categorised, as are links and channels (Category 5 etc)

EN50173 series – European standards, adopted by British Standards
(as BS EN 50173). Components are Categorised, links and channels
are classed (Category 5 components; Class D links and channels).
Broken down into a number of sub-sections to cover offices,
data centres, industrial, home etc.

ISO11801 – International standard, fairly well harmonised
with EN standards.

Then comes the cabling:

Category 3/Class C – 16MHz intended operating frequency to
support 10Mb Ethernet and 16Mb Token ring. Not used any longer
in Europe, but is the standard for voice cabling in North America.
Typically unscreened.

Category 4 – 20MHz operation introduced to support 20Mb token ring,
dropped by the standards some time ago.

Category 5/Class D – 100MHz intended operating frequency to
support up to 100Mb Ethernet and 100Mb Token Ring
(both 2-pair applications). Can be Unshielded Twisted Pair (UTP)
or shielded (several different options).

Category 5e/Class D – 100MHz intended operating frequency,
but optimised for 4-pair simultaneous full-duplex operation.
Introduced to support 1000Mb Ethernet (1Gb). Can be
Unshielded Twisted Pair (UTP) or shielded (several different options).

Category 6/Class E – 200Mhz intended operating frequency but
tested to 250MHz. Introduced to offer future proofing over
Category 5e for new applications. Can be Unshielded Twisted
Pair (UTP) or shielded (several different options).

Category 6A/Class EA – 500MHz intended operating frequency.
Introduced to support 10,000Mb Ethernet (10G) which requires
about 420MHz of bandwidth to operate. Can be Unshielded
Twisted Pair (UTP) or shielded (several different options),
but there is a big debate on the UTP vs Shielded performance.
TIA 6A is not the same as ISO 6A.

Category 7/Class F – 600MHz intended operating frequency.
Introduced at the same time as Category 6 (2002), but only
available as a screened solution. Does not use RJ45 connectors.
Used quite a lot in Germany. Not recognised by the TIA standards.

Category 7A/Class FA – 1000MHz (1GHz) intended operating frequency.
Introduced at the same time as Category 6A for future proofing.
Only available as a screened solution and does not use RJ45 connectors.
Not recognised by the TIA standards.

If you want to consider 40 or 100Gb operation, then it’s good
old fibre (which also comes in a number of different performance
classes: OM1, OM2, OM3, OM4, OS1 and OS2).

We tend to use cat5e for just about everything. Sometimes we go shielded. If cat5e won't do the job the it's fibre.

5e is just fine - it's doubtful whether you'd ever see 10Gb outside of a data centre.

To be fair, you don't need 1Gb to the desktop for the vast majority of standard office applications, but NIC's and switch ports now come with it as standard, so it gets deployed without any real need.

Uncompressed video (1080p deep colour HDMI at 24fps) will soon see you up there. And as things move to higher resolutions (4kx2k plus) bandwidth ramps up exponentially.

HDMI is the bain of my existence. SDI is much better however, the studios dont like it because it's unprotected.

Yeah - that's our oldest "pc" system we still have. We also use (networks) profibus - asibus - canbus - interbus etc etc.

Those are all distributed control networks though right? Not strictly "data-networks" like say Ethernet etc.

Correct - we use ethernet aswell (for data)
