Wider Wheels?
If OEM is 18x8 and rears 18x8.5, what handling should you notice by going
18x8.5-18x9.5 Thinking about BBS AIR II CK and don't want 19's.

Tire size is going to determine the difference in handling really. However if you get lighter wheels and tires than stock, that in itself will be a noticeable difference (quicker accel, more nimble feel, more response...comes with the tire choices too).
If you keep the sizes staggered similar to stock, then the handling balance should remain the same. Most people take new wheels as a chance to get away from the stock RFT's, and by doing so notice a big difference in the feel of the car, for the better. More grip, more response, less noise, and better road feel are all the benefits of non-RFT's. If you stay on the same tires that are on your car currently, and all you change are the wheels, the handling should remain the same assuming the offsets are the same as those commonly used for E90/E92. You may notice a little better feel/more grip with a wider track (achieved by getting lower offsets than the stock wheels). Hope this helps.

Wider wheels will allow you to accomodate wider tires as long as it is compatible with your drop/offsets. Wider wheels alone really won't do much.
The question is, how wide of tires can 8.5 widths in the rear accomodate?
