Might look at the options from http://www.leatherworldtech.com/. The whole thing seems like a messy project with significant opportunity to fuck things up.

If you had the time and energy I'm sure it can be done, plenty of people do it.

I'd buy a new (used) black carpet, and black door panels and dash. Then, separate the leather inserts from the tan door panel and attach them to the black door panel, and install the black carpet and dasher. LeatherWorldTech makes good dye, but if they have anything for vinyl I haven't used it. You're probably looking at $500. Honestly, not worth the effort unless it's a super rare car (335s are not). If you don't like the spec, keep waiting.

Take it from a guy who desperately wanted sport seats and undertook a similar project...don't.

Either buy the car how you want it or buy OEM parts from wrecked cars and piece it together. Swap in black carpets and a black center console, then swap the tan leather portion of the door cards onto some black door cards...now you've almost got oyster. I'm slowly going the same route but with a grey interior.
