Why do most popular high end brake systems only offer front brakes or only offer rear as an added charge for the front? Are the front brakes way more important than the rear?

yes, when you brake, the weight/momentum of the car shifts forward to the front 2 wheels.

In most cars, majority of the brake force is applied to the front.

It is actually more complicated than that. a well designed front only brake kit does not typically have more brake torque than the stock setup. this is because simply increasing front brake force would mess up the brake bias and make the car stop worse

the reason to go with bigger rotor (other than cosmetics, which is why most do it) is improved heat dissipation or better 'feel'
