congrats on the ride.

Oyster isnt hard to maintain at all...As long as you aren't doing yard work or working on a oil rig then getting in the car. The weekly wipe down and it looks new.

I have Dakota Oyster on my 2010 320d and, although the color is gorgeous, maintaining it is a pain - must clean it every 2 weeks (light clean though) and the leather is really susceptible to wear. I only have 30,000km on the clock and already there are wear marks on the side driver's seat.

18" wheels = better performance. Save the $1k and get M3 suspension bits.
And definitely do ED.

I have beige with Montego blue and it is fine. My preference would be for saddle brown, maybe with AW, but I would do the practical thing and get black or beige leatherette.
I like the looks of the 313 with the rest of the 335is trim. But if you can afford them, get lightweight forged rims (Advan RZ-DF, Volks, ...)
