You can buy the pre-cut and stitched seat covers and pre-wrapped door panels, I don't think you can buy flat pieces of finished leather from them though.

You can order leather to match any car made at an Auto Uphosltery shop.
They have books for every car with the different colors/grains available to match OEM - be advised though, leather ain't cheap, it was 25 cents/square inch back in 1980 when I worked at a custom shop... The match is dead on as this is what they use to replace individual panels in seat covers when they need repaired.

Ahh, I see. Well, if your current interior is in decent shape I'd take a good long look at going the leatherique route before dropping the coin for new leathers. It's a bit labor intensive, but I redid my front seats from black to grey over the weekend and had phenomenal results.
