I am not sure about the main course but if you want to serve an interesting desert, may I suggest "Kitty Litter Cake" recipe?

One of the girls at work recently made Chipotle Chicken (we had it with white rice) and it was super-tasty. Ingredients were simple, just Chicken Breast, can of Chiptole Peppers en adobo sauce, Chicken or Vegetable Broth, Can of Tomato Puree, Salt & Pepper to taste.

I can ask her for the recipe if your interested.

Lol i had that cake at a Halloween Party last year. It was mighty good . Dam that chicken sounds so good and so easy . I think that's what im going to make , seems simple enough .

My wife does not cook

Yeah it's very simple and prep time is minimal..



Sautee 1 onion (sliced or rings) in 4 tablespoons vegetable oil until translucent.

Add 4 chicken breasts and sear (brown on all sides).

When chicken has been seared Add 1 can of Chipotle Peppers en Adobo Sauce (Be careful here, I buy the Embasa Brand pictured below which is less spicier than other brands I've tried, try to get the same brand) and mix in and sautee for a couple of minutes.

Add 1 big can of tomato puree (28 oz. I think), and 1 regular size can of chicken or vegetable broth and bring to a boil, once it starts boiling turn heat to low and simmer until chicken in cooked all the way through... about 15-20 minutes.

Take a knife/fork and shred each of the chicken breasts really well in the sauce. There should be no pieces of chicken in the sauce, all the chicken should be shredded.

Salt and pepper to taste.

Serve with rice OR serve with cabbage on tostada shells.

i've heard from female co workers that a crockpot is a very good investment. You can throw a whole chicken in there with some broth, vegetables, etc.. and let it do what it does for i dunno how long (i think 5 hours or so) and it's supposed to make it very tender etc.. I have yet to try but they say I should buy a crockpot with a timer. You can make stew from there as well
