I would love to have this car if I could get mines sold asap... Any idea how much it would cost to extend the CPO even longer?

550i gets on average 10MPG better than the E60 M5.

You couldnt CPO the car again since that can only be done by a dealer when the car is traded in. You CAN purchase a BMW extended warranty from a dealer, I cant remember exactly how much it was...I'm thinking in the neighborhood of $3000 for 3yrs/30K miles. But like I said the CPO on this car will transfer to the new owner and is good until Nov. of next year or 100K miles.

Right, CPO is more of an inspection and certification of a used vehicle and it includes an extended warranty. You can purchase another extended warranty when the CPO warranty runs out. I have checked with the dealer and this car still qualifies for purchasing of additional BMW extended warranties.
