18X8.5 Winter Rims

Will I have any issues running, 18X8.5 Rims all 4 tires with 225/40/18 winter tires??

Or should I just stick with 18X8 for all 4 tires?

The rims set up I want for the winter only come in 18X8.5, I'm just wondering if this will cause any problems?

I don't like the 17'' alloy selection on Tire rack, plus I know a few members on here ran a 18'' winter set up last year without any issues so I think that's the route I want to go...

Go to the tire manufacturer's website and check out the specs. The guide will tell you what the allowable range is for the tire and then the recommended tire size as well.

I think the 18x8 wheel size is a better fit for 225/40/18 tires.

225/40/18 will work on the 18x8.5" you like.
