I think they call them Fixed rear door manually hand assisted operating devices... but I could be wrong.

My passenger door handle was peeling so instead of getting a new part from the dealership, I plasti-dipped it in black and it looks exactly like OEM. it was an easy and cheap fix

Has the color actually worn off or are they just dirty? To lift any dirt, try a Q-tip with mineral spirits on a small area of the handle first and work it in. OR if peeling, buy leather paint.

So i'm trying to buy a leather paint to paint the door handle trims, which appear to be Beige color, but how to know the exact color of it and which paint to buy... somebody had any experience with this ?

Must be a German thing. I had the exact same trim coating on my '02 GTI.

I actually have the same issue on part of my pass side door handle (not the one you pull to open the door, the bit that you pull to close it from inside.) Was actually thinking of trying spray plasti-dip (I actually have a can from doing the battery hold down on my Jeep) anyone tried it?

I'm thinking that that would be very similar to factory, but also likely similarly durable, as after being (recently) introduced to the concept of plasti-dipping one's exterior, one of the selling points seems to be "you can peel it off easily if you change your mind." Was thinking of just doing a semi-gloss black spray paint instead, might not have the same tactility but might last longer?
