I'd like to wrap mine in black suede, or a version of suede like a micro fiber would even be ok for $$

I'd love to do this too if the price isn't too bad!

Might be costly, but gives the car a Aston Martin feel.

Wonder if this will affect airbag deployment?

I don't see how. Those airbags deploy at such a high rate, an extra layer of fabric shouldn't affect it.

some interesting info on airbag deployment :

The airbag deployment is determined by the rate of deceleration rather than the speed that you're doing immediately before the accident. This is because your speed at milliseconds after impact is actually zero. A threshold speed of a couple of miles per hour may apply for some units.

Therefore a so-called high speed collision really means that you have had a very high deceleration rate.

You may have being doing any speed you like to think of in the instant before impact. At impact your car will rapidly slow to a halt. This may be very quick indeed. The airbag will fire if the deceleration rate (from any speed) is rapid enough.
This is how it tells the difference between sudden stops due to a crash and a more controlled stop due to heavy braking.
