2nd is too hard on the clutch with the stock diff gearing.
Now if you had the AT rear end gears then I bet you could launch in 2nd.

I'm running cobb e30 map and I launch from 1st andlately with the warmer weather I've been hooking up well.
But also I have camber kits in the rear so I'm running like -.6 degrees of camber with 275 wide re-11 tires. Second gear launch would probably be too slow for mt guys cause of the low final drive. ..3.08 vs 3.46

I limit boost in 1st to like 9psi. That seems to work pretty well. On the track I can go maybe 10psi since it's usually a little stickier. I try to work the gas pedal on my launches a little bit, rather than just mash it.
