The chase in Bullit is a classic, though my vote goes to Ronin. Apparently, the staff at Road & Track magazine think the same, as the 5/13 issue showed a poll from their staff asking the same question. 21.4% picked Bullit, while the remaining 78.6% picked Ronin.

Ronin at least has a reasonable amount of continuity. Bullit is such a cobbled together mess that it loses some of it's authenticity. French Connection is cool, for no other reason than the rumors that they didn't get any permits and just ran it through real NYC traffic.
