Brand I got are Braklabs, have them on 3 cars and have had success.

I've read lots of posts on here that people who track use OeM blanks

I have always used slotted rotors, and have never had the inside of the slots rust.

Generally there is a plating of some kind on the rotor that you need to wipe off before mounting the caliper, or it will get all over the pads, and that coating keeps the inside of the slots clean
