Neil,
The 17x9" ET30 is ideal as a square fitment wheel for the 335i. The 17x8.5" ET20 is a wheel really only intended for E30 M3 fitment and will actually stick out 4mm further than the 17x9" ET30. The 17x9" ET30 also allows for a much wider tire to be used without it ballooning over the wheel thus achieving much better response out of your set up. Currently we only do mounting and balancing for local customers and do not ship mounted wheel and tire set ups.
