Yes you could do this. Bilstein shocks are awesome but they're very harsh riding I think if you went with the koni you would love it. I speak from experience since my Shelby GT500 has Bilstein HD shocks and they are very, very rough riding.
The konis at soft setting with the eibach Pro kit rides like a dream and on for the hard setting is still very awesome.
I totally would recommend the koni's over the bilstein.
