Lol, that's not how tire sizes work. 255/30/19 is basically the same as 255/35/18 in rolling diameter. You can't go from a 18 to a 19 rim, keep the same sidewall size and not change the rolling diameter.
Your current tires are 1 profile larger than stock. Your speedo is already off stock, it probably is actually correct now.
