Its always good to replace the bolts. I didn't, I live in western colorado though so its fairly dry. If yours aren't rusted badly you should be okay there too.
I was going to replace my coil spring shims but the new ones ended up being different, so I reused my old ones (140k miles on them) and haven't had any issues

So strut mounts are the only thing that is a must to replace right? Anything else?

When I did my suspension, surprisingly all my strut mounts were in good condition. The bottom mounts for the rear had some wear but everything else looked good.
I replaced all my mounts anyways, upgraded rear top mounts to monroe, everything else I left OEM.
I can't think of anything else I replaced other than those!
