I just bought exactly that, 2.8Ghz Extreme with 4Gb Ram, with 1Tb internal storage, and a Western Digital external 1Tb drive... and I downloaded Bootcamp from Apple to allow me to dual boot either to OSX or to Windows Vista (not using Parallels, which isn't the same thing)... awesome machine, and got it for less than £2k (not including external hard drive) from MicroAnvika on Tottenham Court Road in London...
Photoshop positively flies, as does Final Cut... well worth the spend for me (although my other half almost choked when she found out - apparently, she can buy 8 pairs of shoes for the same amount of money...
)
