new to wheels, few questions

1) so when buying wheels, do you trust the seller to suggest a proper offset?
2) do you trust the seller to suggest proper tire size for the wheel as well?

for example, I have 09 335 xi coupe and I'm interested in 18x8.5/18x9.5 VMR vb3 wheels
EAS suggests +40 (front) / +33 (rear) and for tires 235 and 265 respectively

3) so can I safely conclude that this is the optimum set up for me?

4) how does changing the offset translate to how the wheel looks on the car?
5) can you even pick a different offset or do you go by what is appropriate for the car make/model/particular wheel combo?
6) why do I notice that people go with wider than 235 tires for 8.5 width wheels for example?
7) will having a wider tire make the tire stick out past the wheel and give it a better look?
8) how do I ensure the combo of no rubbing, proper handling and best possible look?

sorry for all the questions,, total wheel size noob here, trying to learn all that I can
