Any reason I can just support the rear lower control, unscrew the bolt to the knuckle and then replace the spring; then carefully realign and drop the shock into place (leaving it attached at the upper mount)?

Yes, you should be fine. Here are my notes from last installation:
Replace springs:
-put lift under control arm
-remove lower control arm bolt (21 mm)
-lower lift
-pull arm down, and remove spring
-replace rubbers if needed
-put spring, and raise with a lift. Need to raise pretty high for the bolt to go in comfortably
-install lower control arm bolt
-remove lift
