The only way a weekday would work is if there is a major holiday that a majority of folks get off. This excludes holidays that involve traditional gift giving or eating (don't count Christmas or Thanksgiving)
You're best bet might be early December (but holiday parties are going to be competition) to do something this year. You might want to wait until after LSU's bowl game (early January). The only issue there will be cold weather but if the meet is at a restaurant you should be good.
