I haven't experienced this before, but will throw out some ideas:

Does your fan run run at full blast?

Do you have any other method for reading coolant temp? (MHD, JB4, etc.)

Depending on that second level of data, you'll likely be able to track down the problem (likely a bad sensor, loose/unplugged cable, etc.)
