Update: problem solved, all working now.
I realised I was installing the mSATA adapter the wrong way round. I had to flip it upside-down to get it to work. It all works lovely now.
Would recommend not using mSATA-IDE-USB - it's better to use mSATA-SATA for less issues as well.
