Shift at redline always. You'll land back at 5000rpm and be making more average power than if you shifted earlier.
As far low end torque goes, buy my Dinan intake and ask AA if they have recently revised their tune. Currently, I never shift past 3K in daily driving, I have plenty of low end torque. Also, you should look into headers...
