Tabbouleh is the quintessential Middle Eastern (Lebanese) salad. Core ingredients are mint, parsley and grain, normally bulgur. I used couscous because I didn't have bulgur on hand. The seasonings are outstanding. Cumin and sumac are pretty standard. Next time I want to use seven spice, which includes cardamom, cinnamon and a few others.

I need to get this into my wheelhouse because i love fresh stuff. Do you use a food blender or chop by hand?
