Ugh..... If there was ever anything to put me off a phone, that sentence right there is it....
Regarding the icons etc, you should still have Samsung Themes so you should be able to change that pretty easily (Material Dark is a decent free theme)...
As for the sounds, other than changing each sound individually (if possible) under the sound/notification settings I'm not sure what to suggest. I'm not sure if sound "theme" packs are a thing. You might also be able to use "Zedge" to customise the sound a bit.
Not sure I can help with the tabs bit, A new Launcher might help there. There are a few Oreo Launchers on the Play Store.
I know this is all a bit of a ballache but it might help alleviate your pain!
